Regional ingredients for first-class indulgence

Only good fresh ingredients end up in the pan, oven and on plates at our restaurant in Val Pusteria/Pustertal. Our chef de cuisine Matthias invests a great deal of time in the selection of ingredients and the creative and tasty composition that will make your palate jump for joy.

Rare and almost forgotten natural gems, all kinds of historic varieties of vegetables, grains and fruit, are turned into new culinary highlights in the Lodenwirt kitchen. Specialities like first-class dry aged beef, which we buy from South Tyrolean butchers, or Wagyū beef from South Tyrol can be found on our menu time and time again, as well as fresh sustainable fish and seafood. Fresh herbs and fine spices provide the necessary je ne sais quoi in our dishes and high-quality olive oils from Lake Garda refine one or two Mediterranean dishes. Original South Tyrolean “speck” is of course absolutely essential in traditional regional cooking. Speaking of regional: the cheese from the South Tyrolean master cheese maker is superb!
